Bay Salted Caramel Sauce

This dark, rich chocolatey caramel sauce has an interesting combination of flavours that had one of my recent omni dinner guests licking the saucepan clean after she’d finished both her dessert and her partner’s! It combines chocolate with bay leaves and salt. It is rich, decadent and of course totally vegan! Serve it with churros and vodka-soaked cherries or just nip out and grab a tub of vegan ice-cream.

  • 50g margarine
  • 100g muscovado sugar
  • 4 fresh bay leaves
  • 5g rock salt
  • 150f soya cream
  • 100g dark chocolate
  1. Melt the margarine in a pan
  2. Dissolve the sugar in the margarine
  3. Add the bay leaves and cook for a couple of mins
  4. Add the salt
  5. Take of the heat, add the cream and whisk until glossy
  6. Toss in the squares of chocolate and stir while they melt
  7. Serve warm
  8. Phhwooaaar!
