Vegan Eggy Bread

Eggy breadVegan eggy bread (or French Toast if you want to be all la-de-dah) is so easy to make. I just bung a 2 cm slice of plain tofu in a bowl with a splosh of soya milk, a tsp of gram flour and a large tsp of plain flour, a generous pinch of black salt and some black pepper and blend. You can use any bread but stale baguette works well.  Just soak the slices in your vegan eggy goo and fry them in some olive oil in a hot frying pan. Bit of brown sauce – very nice too I reckon!
