Today we ate like kings! I’ve been celebrating all weekend and this morning I made pancakes with smoked tofu and fruit. I used a recipe from the VVF’s guide The Soya Story. There was enough mix for so many that I added raisins and cinnamon to half the mix and made extra ones for heating up later. These little fellas can be dropped into a toaster to reheat them. I fried some smoked tofu and we had them with blueberries, raspberries and strawberries with agave syrup and smoked chilli jelly – which it turns out goes very well with fresh strawberries – so there!
