Thousand Island Tofu Rosso

OLYMPUS DIGITAL CAMERAThis made-up starter turned out pretty good if I say it myself. I had a small tub of orange slices hanging about in the fridge and a pink grapefruit that I hadn’t got around to eating… I chopped up the grapefruit and added it to the slices of fresh orange. To this I added, black olives, mixed beans,  julienne beets and slices of Taifun Tofu Rosso. Over this I poured homemade Thousand Island dresing made from vegan mayonaisse, tomato ketchup , lemon juice and olive oil. I served it with a few slices of toasted baguette. It makes a nice light lunch or an interesting starter.
