Christmassy Mincemeat Pecan Cupcakes

OLYMPUS DIGITAL CAMERAMore cakes made with the last of the mincemeat! Well, nearly the last of it… I might just squeeze out a few more mince pies at the weekend when my aunt comes to visit!

These cakes were made with brandy frosting and caramel pecans. I made them to take to my friends’ house in the country. They have a lovely cottage on top of a hill with sprectacular views. We ate heaps of tasty vegan curry, drank wine and chatted lots then walked under the stars to their local pub where we had cider. A top night!
