Smoked Tofu Mini Quiches

  • 8oz wholemeal flour
  • 4oz Pure margarine
  • 2½  tbsp ice cold water
  • 2 medium onions, chopped
  • Olive oil
  • 1 small courgette chopped
  • 1 small red pepper, chopped
  • Large pinch or two of mixed herbs
  • ½ block Taifun smoked tofu
  • ½ block Cauldron foods plain tofu
  • 3 tbsp soya milk
  • 1 tsp Vegetable Bouillon
  • 2 tsp curcumin
  • ½ tsp black salt (if you like!)
  • Large pinch fresh black pepper
  • Large pinch or two of smoked paprika

Make the pastry by gently rubbing the marg into the flour to form breadcrumbs. Stir in the water and mix lightly until it binds together – avoid over-handling it as your pastry will turn into wood when cooked!  Grease a large muffin tin and line with pastry. Blind bake at 180°C for 10 mins. Fry the onion in the olive oil for a few mins then add the courgette and pepper. Cook until soft then add the herbs. In a medium bowl, blend the tofu and milk with a hand-held blender until smooth. Add the Bouillion and curcumin and season to taste. Mix in the vegetables and spoon into the pastry cases, sprinkle smoked paprika on top and bake for 20 mins at 180°C.

Serve with potato salad and a green leafy salad.
