One of my favourite dinners is what some friends refer to disparagingly as veggie slop! That’s bit unfair coz it rarely is that sloppy. However, veggie it is! What I’m talking about though is vegetable stew made from all the vegetables you can find – it’s a good way to use up those bendy carrots. I found a whole bulb of fennel in the fridge that I’d forgotten all about so that went in along with an onion, sweet potato, leek, pepper, cauliflower, courgette and more… Cook it up on a medium heat with some stock and herbs and hey presto! A delicious filling autumn stew. Chuck a can of mixed beans in for extra protein if you like.
