Let’s Pretend… it’s Summer

I’m a little bored of the persistent rain to say the least. I went camping at the weekend and while I refused to let the torrential rain spoil the trip, the rain and mud had some impact – it put some people off coming with us which was shame. So, if you want to pretend it’s baking all day and balmy in the evenings you can cheat and make some oven-dried tomatoes that will lend a taste of summer to your pasta, pizza or salads. You just slice your toms in half and put in a warm (not hot) oven for a few hours until they look almost dry and chewy. Check out your local supermarket or fruit and veg shop for a bargain bag or box of cheap tomatoes and get cooking! Well you won’t be in the garden having a BBQ in the friggin’ rain…
