Brunch of Champions

Scrambled tofu is probably the breakfast of champions but sausages, bubble & squeak and salad is definitely the brunch of champions.

Bubble and squeak is a traditional English dish named after the sound it makes whilst cooking! It is made by shallow-frying the leftover vegetables from a roast dinner. The main ingredients are potato and cabbage, but carrots, peas, Brussels sprouts and other vegetables can be added. The cold chopped vegetables are fried in a pan together with mashed potatoes or crushed roast potatoes until the mixture is well-cooked and brown on the sides. It is often served with pickles or brown sauce. I like to make it fresh using mashed potatoes with lightly steamed shredded cabbage. I mould the mix into ‘cakes’ and shallow-fry until they are brown on both sides. Resist the urge to keep poking at them or they will stick…  They make a great brunch and taste even better when you eat them outside.
