Frankie Goes To St Werburghs Salad

This couldn’t be much easier and it is great for a supper to serve for friends on a warm summer evening with a cold beer or two…

Use all your favourite salad ingredients: a selection of salad leaves (rocket, mustard leaves, red chard, baby spinach, red oak leaf, frisee, endive… etc). Red onion or spring onions, thinly sliced. Tomatoes, cucumber, pepper, radishes… anything you like, chopped or sliced into a similar size. Mix it all up in a large bowl then throw in some sliced olives, capers and finally some sliced frankfurters. I like Taifun Frankies, you can get them in Waitrose or your local health food shop. For the dressing, I mix egg-free Mayo with some freshly squeezed lemon juice, a dash of olive oil and ketchup and if you like it spicy, add a few drops of Tabasco. Serve with new potatoes tossed in chopped fresh parsley and olive oil. Guten Appetit!
