When I was a kid, I used to eat these rock hard green sweets called chocoalte limes. The outside was lime-flavoured boiled sweet and inside was dark chocolate. If you could resist crunching them, by the time you got to the middle, it was all melty! That’s where the inspiration came for these chocolate and lime cupcakes. They are made using a simple basic chocolate cupcake recipe and adding the zest and juice of one lime. They tasted great, slightly unusual. If you want to be really tropical pour some coconut milk over them! I am now looking for more cake ideas based on unusual combinations…
