Cheap Bastard’s Soup

I’m on an austerity drive, budgeting on food. Shopping at my local fruit and veg shop is much cheaper than buying fresh fruit and veg in the supermarket. It’s nice having a fridge full of fresh food too, but sometimes a few things might start to look a little tired. This soup is a really good way of using up leftover vegetables before they spoil. It was made using a whole head of celery, one carrot, one onion, some pak choy, potato and fresh garlic sweated in a heavy pan in a dash of olive oil for 20 minutes then add stock and season with celery salt and freshly ground black pepper. Garnish with the celery leaves, finely chopped.
