Scrambled Basil Tofu

If you are looking for something extra tasty for breakfast or brunch then try scrambled basil tofu. It’s delicious and couldn’t be much easier. First, finely chop a small red onion and fry in olive oil. While it is cooking, crumble the tofu into the pan with your fingers. I use half a block of Taifun Basil Tofu with a thick slice of plain tofu. Add ½ a teaspoon of turmeric and ground cumin. Keep it all moving in the pan on a medium heat for 5-10 minutes depending on how well-cooked you like it. If you want to be really adventurous serve it in a Quesadilla with sliced roast peppers and melted vegan cheese with guacamole on the side (I’ll post the full recipe for this sometime soon). Otherwise, it goes well with smoked paprika roasted potatoes and grilled tomatoes and mushrooms. Or you could just have it on toast!
