Stuffed curried Patra leaves are a Gujurati speciality dish from the West region of India. The Patra leaves are stuffed with a mixture of gram flour (chick pea flour), tamarind and spices to make a rich and spicy vegetarian starter or snack. You can buy patra readymade in tins, I am lucky enough that they sell patra in the shop at the end of my road – it’s a bargain at just £1.08! To cook it, just remove from the tin, thinly slice and fry! Patra makes a great snack, good for parties! It can also be served as a side dish with your favourite curry. We had it with a chick pea and spinach curry and Keralan cabbage thoran. It looks very pretty on the plate too!
