Yellow Split Pea Soup

This is a very savoury winter warmer for those dark days when you feel like you need a hug but there is no one around. This is the next best thing. Followed by chocolate obviously!

  • 300g dried yellow split peas
  • 1 onion, chopped
  • 1 carrot, sliced
  • 2 sticks of celery, sliced
  • 2-3 cloves of garlic, crushed
  • 1 large tsp vegetable bouillon
  • Freshly ground pepper and celery salt, to taste
  • 2-4 leaves of dark green cabbage/spring greens or cavolo nero, finely chopped

Boil the peas in plently of water until they are very soft and begining to thicken. This may take close to an hour, don’t try and hurry this soup. Fry the vegetables (except the cabbage) in a large pan until soft then add the garlic, bouillon and pour in the lentils. Season to taste and continue cooking for a further 10 minutes. Stir in the green cabbage and let cook for a further five minutes then serve, piping hot! Yummy! If this doesn’t lift your spirits I’ll eat my hat…
