Leftover Pastry – Cinnamon Palmiers

I wonder if anyone has written a song about leftover pastry? Melanie Safka sings a beautiful song about Leftover Wine. I guess leftover pastry isn’t as glamorous. My leftover pastry sits in the back of the fridge until it darkens and turns into a wooden ball. You could use it at a coconut shy! (did you know a coconut shy (or shie) used to be called ‘The love grove alley’? Well there you go!

So now I have found quite a good use for leftover pastry: Cinnamon Palmiers. Roll out your pastry into a rectangle. Warm some vegan marg in a pan and add dark muscovado sugar and plenty of cinnamon to make a paste. I didn’t measure anything but I kept tasting it. Spread the paste across the pastry and roll each side over to meet in the middle. Then, using the sharpest knife you have, cut slices just under an inch along the entire length of your roll. Place on a well-greased baking sheet and bake at 180° for 15 mins.
