What makes a good hearty meal for someone who has been to the dentist? Macaroni ‘cheese’ I reckon! I’ve started making it with broccoli in it too for an added bit of flavour and nutrition. Didn’t have any though so I put a leek in it and it worked pretty well. I don’t have a recipe, it’s very easy. Put your macaroni (or other pasta shape if you want) on to boil while you make the roux sauce. Melt a dollop of margarine in a pan then stir in 2-3 tsp of flour and cook over medium heat for a couple of mins, then add soya milk bit by bit stirring vigorously until you have a smooth sauce. Add 1tsp vegetable bouillon, 1tsp mustard, a dash of veggie Worcester sauce, some nutritional yeast and lots of freshly ground black pepper. Chop up a leek or some broccoli and steam in a small pan until just cooked. Strain the macaroni and add into the sauce with the vegetables and mix. Transfer into a baking dish and top with sliced tomatoes. Bake at 180°C for 20-30 mins until just browning on top. Tuck in!
