Hardcore Parkin

I made my first Parkin today… I didn’t have enough golden syrup so I substituted extra molasses. My oatmeal wasn’t very fine either so the end result was very tasty but not so light and spongy as Parkin I have tasted before. Hardcore!

  • 340g medium oatmeal
  • 185g plain flour
  • 2 tbsp soft brown sugar
  • 3 tsp ground ginger
  • ½ tsp freshly ground nutmeg
  • ½ tsp salt
  • 65g stem ginger, chopped
  • 250g golden syrup
  • 250g molasses
  • 125g margarine
  • 70ml soay milk
  • ½ tsp bicarbonate of soda

Mix the top six dry ingredients in a large bowl. Stir in the ginger too. Warm the syrup, molasses and marg in a pan until the marg has melted and blended. Warm the milk and bicarb to blood temp! Mix it all together and pour into a greased and floured tin and bake 170°C for 40 mins.


Make a very tasty winter cake that might be good with custard if your insides need lining!
