I don’t think I’ve ever stuffed an aubergine (eggplant) before. My Mum used to say “Life’s too short to stuff a marrow”. Perhaps that put me off… I have stuffed plenty of peppers in my time, but never an aubergine. So it was a real treat last night when my son offered to cook dinner and came up with this!
I had the last of the vegan cheese on mine to add even more flavour – they were bloomin’ delicious. He used onion, soya mince, red pepper, garlic and we had a rocket (arugala) salad with them. Even though I enjoy cooking, I love eating food made by other people. The aubergines were on offer from a local veggie shop too so it was a bargain dinner to boot!
