I wanted to make rosewater, cardamom and pistachio cupcakes but the rosewater had gone off and smelt like a Turkish urinal! I couldn’t find raw pistachios and the cardamom wasn’t very flavourful. So, I made these little cupcakes with orange water, chopped roast almonds and topped the Toffutti frosting with redcurrants from the garden. They turned out quite nice if I say it myself! The party in Wales I took them to went very well – we all had a lovely evening eating, drinking and making merry in the valley!
