I wanted to experiment a bit this Christmas so I came up with the idea of a layered nut roast with two different nutty layers. The bottom layer was made with a mix of chopped cashews, walnuts, onions, red pepper, herbs and port. Then I put a layer of lightly cooked chopped leeks in the middle and on top, a chestnut, thyme and brandy layer. The whole thing was wrapped in shortcrust pastry and painted with soya milk and turmeric to add colour. It came out quite well I reckon!
