Some evenings I just want to eat a big colourful plate of crunchy salad – it feels like a massive boost of vitamins and minerals! The star of this salad was the beetroot my friend Ruth made; it was pickled with oil and vinigar and star anise! The flavours were amazing! I love a bit of red onion in my salad too and avocado bumps up the good fats. It was a cold dark miserable night with the wind and rain lashing against the windows so I baked some big old potatoes too. The photo doesn’t really do this spud justice – it was huge. Smothered in veggie marg and freshly ground black pepper this was a great weekday supper. There are two more winter salads here and here – both good for parties!
